Avocado is one of the main food groups at our house. Good fats are important and coconut and avocado is where we get our share of it.
Favorite avocado toast/sandwich combos-
+a thin layer of hummus and sliced red pepper
+turkey bacon, fried egg, tomato, lettuce (ooooh yea this one)
+lemon juice and salt
+sliced pastrami or turkey
