Peaches + summer = BFFE. This is a classic and simple dessert, but dairy free for our allergic friends! I eat this for both breakfast and dessert. And lunch. Or a snack. You get the idea.
Coconut milk takes the place of heavy cream. Lightly sweetened with maple syrup and a dusting of cinnamon makes a 2 minute dessert. Or for breakfast, top with cinnamon, sliced almonds, granola and can you guess what I’m going to say…?? Yes, a sprinkle of coconut. Always with the coconut.
Prep time: 5 minutes
2 cold peaches, sliced
just over 1/4 cup cold coconut milk
2 tsp maple syrup
sprinkle of cinnamon
-Stir maple syrup in to coconut milk.
-Add sliced peaches to a bowl, pour milk over top and sprinkle with cinnamon.
