Ok. You guys know how I eat. But sometimes, you just really need to cheat. I’m getting back on the weight-loss train after having baby number three, so I had a ‘last supper’ weekend. Yea no, not just one meal. Had to have the whole weekend. It was needed and worth it. But I probably should’ve posted this then, instead of waiting because now I want it!! Boo hoo. I can’t wait to be back to my normal body size, to be healthy, and to not have to worry about little things like a bowl of indulgent, cheesy, mac and cheese. Until then, you can eat it for me.
Prep time: 15 minutes
1 lb organic pasta (can be any type)
3 tbsp good-quality butter (my favorite brand)
2 cups white cheddar cheese
1/2 cup milk (I used what I had on hand- rice)
1/2 cup full fat plain greek yogurt (I love Greek Gods!)
1 1/2 tsp salt
1/4 tsp pepper
-Prepare pasta in salted water to package directions and preferred texture. (I like mine slightly al dente) DON’T RINSE.
-While pasta is cooking, prepare cheese sauce.
-In a pan over medium heat, combine butter, milk and cheese. Heat until melted and fully mixed, stirring frequently.
-When the cheese is fully melted, stir in the yogurt and salt and pepper.
-Add in the hot pasta and stir frequently until well coated. This will take a few minutes- be patient and keep stirring!
-Taste and adjust salt and pepper as needed.
