Granola is something that is definitely worth making at home. It’s super easy, only takes a few minutes of hands-on work, and is way cheaper to make yourself than to buy. As with anything homemade, you get to control exactly what goes in to your food. This is a really healthy granola- a lot less sugar than most recipes and made with coconut oil- so you can feel great about eating it often and feeding it to your family!
This recipe is so yummy! We like to have it with milk, in a parfait, or even on it’s own as a little snack. I like my granola on the plain side, so I don’t add too much to it, but feel free to add in your favorite mix-ins!
Prep time: 5 minutes
Cook time: 15 minutes
Servings: about 4 cups
3 cups old fashioned oats
1/8 cup oat flour (blend oats in blender until fine)
1/2 cup unsweetened shredded coconut
1/2 cup sliced almonds
1/4 cup chia seeds
1/4 cup coconut sugar
1/2 tsp pink himalayan salt
6 tbsp coconut oil
1/2 cup real maple syrup
1/2 tsp vanilla
-Preheat oven to 350. Cover baking sheet in parchment paper or a silpat.
-In a bowl, stir together all ingredients except the syrup, sugar, coconut oil and vanilla.
-In a small sauce pan, combine syrup, sugar and coconut oil and stir until sugar is dissolved. Stir in the vanilla.
-Pour syrup mixture over oats and stir to coat evenly.
-Spread out on the baking sheet in an even layer and bake for 7-8 minutes. Remove from oven, stir and return for another 7-8 minutes.
-Let granola cool fully and then break in to pieces. Store in an airtight container.
