One of my favorite things about summer is the food. Surprised? Yea, probably not. :) We know I love to cook food. And eat food. And photograph food. Just not cleaning up after the food. That I do not like. But a pool party with delicious grilled meats, summer salads, lemonade and watermelon. Doesn’t that sound perfect?? Are you ready for it? I love the cooler weather, but there will always be aspects of summer that draw me in.
This coleslaw is definitely something you want to make for your next picnic or BBQ. I love it best freshly made, so make sure your ingredients are nicely chilled before you start. This slaw pairs well with all of those summer things we were talking about! It’s the only coleslaw we make anymore. So delicious!
Prep time: 15 minutes
1 head green cabbage, shredded
3 large carrots, grated
1/2 small red onion, diced
6 green onions, chopped
1 Anaheim pepper, finely chopped
1 1/4 cup organic mayo
1/4 cup spicy brown mustard
1 tablespoon apple cider vinegar
1 lemon, juiced
pinch of sugar
1/2 tsp celery seed
salt and pepper to taste
-Combine all veggies in a bowl. In another bowl, combine all dressing ingredients except the celery seed and s&p.
-Toss veggies with the dressing and season with celery seed, salt and pepper to taste.
