Double Chocolate Coconut Almond Brownies

B was gone EVERY NIGHT this week, so I had a lot of alone/down time. I’ve been doing pretty well not eating a lot of treats lately, but I really needed something one of those nights. And because we don’t keep goodies in the house most of the time, I had to make something.

I love chocolate, almonds and coconut together, so I thought that’d be something fun to play with. I’m pretty pleased with how these turned out, especially for being thrown together on the fly. Chocolatey, coconutty and cakey. And they’re Paleo! B loved them so much, he gave me a big hug after tasting it. It was hilarious. And so cute.

Bake time: 22-25 minutes



3 eggs

1/2 cup coconut oil, melted

3/4 cup coconut sugar

1/2 cup cocoa powder

1/2 cup finely shredded coconut

1/2 cup blanched almond flour

1 tsp vanilla

1/4 tsp salt

1/4 tsp baking soda

1/2 cup sliced almonds

1/2-3/4 cup chocolate chips (more or less depending, on your taste. I always say mooooore)


-Preheat oven to 350.

-In a stand mixer, combine eggs, oil, vanilla and sugar.

-Add in coconut, cocoa powder, almond flour, salt and baking soda. Mix until combined completely.

-Stir in sliced almonds and chocolate chips.

-Pour batter in to an 8×8 baking dish that has been lined with parchment paper.

-Bake for 22-25 minutes or until a toothpick inserted comes out clean.

-Allow to cool for at least 30 minutes before cutting. Unless you’re planning on topping with icecream and caramel and digging in with a spoon…. That sounds AMAZING.
