B was gone EVERY NIGHT this week, so I had a lot of alone/down time. I’ve been doing pretty well not eating a lot of treats lately, but I really needed something one of those nights. And because we don’t keep goodies in the house most of the time, I had to make something.   […]

Hi!! So if I wanted to add meat do you have a favorite recipe? We are chicken people generally.ReplyCancel

    • Hi! :) I usually just wing it, but I’d throw something like this in the slow cooker-

      4-5 chicken breasts
      1 small onion, diced
      1 tbsp garlic
      1 tsp cumin
      1 tsp salt
      1/2 tsp pepper
1 cup of your favorite salsa
      1 cup chicken broth

Throw it all in the slow cooker, stir to combine, then cook on low for 4-5 hours until cooked through. Shred, add another 1/4 cup salsa, juice of a lime, couple tsps of cilantro and salt to taste. Add in half a block of cream cheese at the end with the lime for a creamy version and then cook for another 30 minutes. ReplyCancel
