Sundried tomatoes are kinda expensive to buy and I’m all about the bargain. So I made my own! They are super easy to do and super yummy! I’ve done several batches while tomatoes are fresh and yummy and cheap so that we can have these babies to use in the winter.
Slice your tomatoes up, but not too thin. The thicker they are, the longer they’ll take in the oven, so try and find that happy medium.
Lay them out on a cookie sheet lined with parchment paper (I was out so I just oiled the pan a bit. It worked fine, but I think parchment paper will make it easier to get off). Drizzle with some olive oil and then sprinkle with salt, pepper and the spices of your choice. I just did a little oregano and rosemary.
Bake in the oven on 200 for 4-6 hours or until they’re dried.
I never said they’d be pretty! :) But they’re yummy!
