Crispy Oven Fries

Mmmm fries. Especially crispy ones. ESPECIALLY when they are crispy without frying!

Prep: 5 minutes

Bake time: 30 minutes

Serves: 3-4 as a side


2 large baking potatoes scrubbed well

1/4 cup extra-virgin olive oil

1 tbsp creole seasoning (recipe below)

kosher salt


Preheat oven to 425.

Pat the potatoes dry and cut them lengthwise into 1/2 inch thick slices. Turn each slice flat and slice again lengthwise into even 1/2 inch thick fries.

Place potatoes into a large mixing bowl and add the oil, seasoning and 1/4 tsp salt. Toss well to coat, then transfer to a baking sheet. Arrange in one flat layer so they are not touching.


Roast, scraping the potatoes from the baking sheet with a metal spatula and turning them over halfway through, until golden brown and crispy, about 30 minutes.

Lightly sprinkle with coarse salt to taste and serve hot.


Creole seasoning:

Yields about 2/3 cup

2 1/2 tablespoons paprika

2 tablespoons salt

2 tablespoons garlic powder

1 tablespoon black pepper

1 tablespoon onion powder

1 tablespoon cayenne pepper

1 tablespoon dried oregano

1 tablespoon dried thyme

This seasoning has a pretty good kick to it, so eliminate some of the cayenne and black pepper if needed.
