Salmon is amazingly delicious. We got a fantastic, huge cut of it last week and cooked it up as soon as we got home. B sat them on top of this cedar plank we had on the grill, seasoned them with salt, garlic, dill and a drizzle of olive oil and let the bad boys do their thing. I threw the lemon slices on top and within 20 minutes we were drizzling lemon butter over the top and the tender, flaky meat was melting in our mouths. We seriously do not eat salmon often enough. So. Yummy.
Prep: 35 minutes
Grill time: 20 minutes
3-4 salmon fillets, skin on
1 1/2 – 2 tbsp olive oil
1 tsp dried dill (you could definitely do fresh)
3/4 tsp granulated garlic
salt and pepper to taste
large cedar plank
Soak plank in water for 30 minutes. Season fillets and set aside. Place cedar plank on hot grill grate for about 5 minutes or until it starts to smoke. Transfer salmon to cedar plank and turn heat to low. Grill until meat is opaque or 130 degrees on a meat thermometer, about 20 minutes, depending on thickness.
In a saucepan, combine, 2 parts lemon juice to 1 part butter and melt until combined (ie 2 tbsp lemon juice to 1 tbsp butter. That’s all I did because we don’t like a lot of sauce, and I don’t want to kill the healthiness of the meal :)) Season with salt and pepper to taste.
