Chia Pudding

Pudding for breakfast? I think so.  I love an easy recipe that is super customizable. This is a really simple base recipe for chia pudding that is rich and filling and you can top it with ANYTHING. Here are some ideas:



fresh fruit (any kind. mango, berries, banana, peaches, apples, etc.)

sliced nuts

coconut flakes

drizzled pure maple syrup

sprinkle of cinnamon


My favorite topping is strawberry slices and granola. I think it makes a great base for a parfait instead of yogurt! I’m thinking this could definitely be served as a dessert. I’m gonna come back to that thought…

Prep time: overnight

Servings: 2


1 cup canned coconut milk

2 1/2 tbsp chia seeds

3 tbsp pure maple syrup (to taste)


-Mix ingredients in a bowl and stir occasionally for 15 minutes. (The chia seeds will settle into a big lump on the bottom if you don’t give it a few stirs.)

-Cover and refrigerate overnight.

-Serve cold with the topping of your choice!
