You’ve probably heard carb-lovers diss cauliflower crust pizza and flatbread. DON’T LISTEN TO THEM. I’m a carb lover. Seriously. Bread, pizza, pastries, pasta. I love them so much I could cry. Oh, if only they didn’t make me so fat and my tummy so unhappy. What I’m saying is, I love pizza. And bread. But I also love this ‘bread’. It really is delicious and so nice that it’s healthy and not heavy on the stomach.
This recipe is a lot easier than others that I’ve tried, even the other one that I have posted. You’ll start off by grating it like you see here. No need for a food processor to rice it- this works perfectly!
The next step in most recipes is to microwave (eck) the cauliflower and then squeeeeeeeze out as much water as you can with a tea towel. I LOVE leaving that step out. Heat a cast iron pan and sauté the cauliflower for a few minutes until it starts to brown a tad. This is getting rid of that water that we don’t want sticking around to make our bread soggy.
Mix all of the ingredients together in a bowl. Line a baking sheet with parchment paper and then use a fork to spread/flatten it into a nice, thin layer. You can do a square or circle- doesn’t matter. Bake for 15 minutes at 400 degrees and viola- yumminess.
Eat it on it’s own, dip it in a sauce, or use it as a pizza crust. We’ve done all three and this is a serious favorite at my house. Quick, easy, and delicious.
Prep time: 10 minutes
Cook time: 15 minutes
1 cup grated cauliflower
3/4 cup cheese (I usually do raw white cheddar)
1/2 tsp salt
1/4 tsp pepper
-Preheat oven to 400.
-Grate the cauliflower. Sauté in a pan over medium heat for 4-5 minutes.
-Add all ingredients to a medium bowl and mix well.
-Line a baking sheet with parchment paper and, with a fork, flatten and spread the mixture into a thin, even layer.
-Bake for 13-15 minutes until lightly browned and pliable.
