Indian Chicken Curry

If you’ve never had Indian food PLEASE try this. And naan. I make the two together and what a deeelicious meal it is. Indian is one of my most favorite foods to eat out, but I’m a bit particular and have decided on a favorite restaurant to get it. I either get curry or tikka masala- both OOOOOH so good. So that being said, I’ve taken care in creating this recipe for you- it had high expectations to meet! I like my curry with a little kick, but I tame it down at home because the kids are eating with us. Feel free to add another tablespoon or two of the curry paste to spice things up!

Omit rice to make this Paleo.

 

Indian Chicken Curry | a kitchen cafe

 

 

Prep: 10 minutes

Cook time: 45 minutes

Servings: 4-6

 

Ingredients:

 

For the sauce-

26.5 oz box tomatoes- diced, chopped or strained are all fine (my favorite brand)

1 cup plain greek yogurt

2 tbsp red curry paste (can be found in the Asian section of most stores)

6 large cloves garlic

2 tsp pink himalayan salt

2 tsp garam masala

1/2 tsp cinnamon

heaping 1/4 tsp ground cloves

1 tsp cumin

2 tsp pure cane sugar

1 tbsp vinegar

 

 

4-5 chicken breasts, cubed

2 tbsp oil

1 small onion, diced

 

 

-In a pot, cook oil and onion over medium high heat until it begins to brown, 5-6 minutes.

-While onions are browning, add all of the sauce ingredients into a blender and blend until well mixed.

-Pour sauce and add chicken into the pot, cover, and bring to a boil. Reduce heat to medium low and simmer for 40 minutes.

 

Serve over rice and with naan!

    • I got mine at Sprouts which is more of a natural foods store and they have a big variety of spices in bulk. I’d start somewhere like that- they tend to have more of the less-common items. Then if you still can’t find it, see if you can find an Indian specialty store!ReplyCancel

    Made this last week. So yummy! I have never made any kind of Indian food. So, I didn’t know what to except but the recipe was delicious and easy. I also made the naan and my kids loved it especially my 9 month old. Thanks, dafni!ReplyCancel

    Made this a couple of days ago…actually I am scarfing the left overs for lunch as I type. I’ve never made curry before, so I appreciated how easy and also how quick it was. I’ll be adding it to my Pinterest board of “Recipes I’ve tried and liked!”

    Also, in case anybody is wondering—I’d say the recipe serves about 4-6. (4 large portions) Is that what you would say Dafni?ReplyCancel
