This is a super healthy, delicious take on Cream of Wheat. It’s a really fast, really filling breakfast that has become one of our favorites!
Cook time: 5-7 minutes
1 1/4 cup almond meal
1 cup milk (I use coconut)
1 tsp cinnamon
1/4 pure maple syrup
1 tsp vanilla
1 tsp coconut oil (this is my favorite brand)
1/2 cup shredded, unsweetened coconut
-In a saucepan, combine all ingredients. Bring to a slow boil over medium heat, stirring often, and then reduce heat to simmer until thickened.
-Serve with fresh fruit, whipped coconut cream and more maple syrup.
