I just love muffins. I love their convenience- they’re the perfect on-the-go breakfast or snack. And we’ve discussed my love for breakfast and all things bready/sweet. I make muffins, a million variations, pretty often.
These are delicious and filling. Really banana-y (obviously… :)) with a hint of coconut. Super healthy, yummy way to start your day!
Prep time: 10 minutes
Bake time: 23-25 minutes
2 ripe bananas, mashed
1/3 cup coconut oil (this is my favorite brand)
3 room temperature eggs, separated
2-4 tablespoons honey or maple syrup (use less sweetener the more ripe your bananas are)
1 tsp vanilla
1/2 cup coconut flour
1/2 tsp baking soda
1 tsp cinnamon
1/4 tsp salt
-Preheat oven to 350. Place paper liners in muffin tin or grease generously.
-Mash bananas. Separate eggs.
-In a mixer, beat egg whites until stiff, 4-5 minutes.
-In a medium bowl, combine bananas, egg yolks, coconut oil, maple syrup and vanilla. Add the last 4 ingredients, stirring until smooth.
-Slowly fold egg whites in to batter.
-Spoon batter into muffin tin, filling each 1/2 full. (Batter will be enough for 10-12 muffins, depending on the size of your bananas.)
-Bake for 23-25 minutes.
