Spinach & Avocado Salad

This is my signature salad. Favorite. Love.

I’ve been making it regularly since my last pregnancy when I was on a no sugars/no carbs diet. Desperate for variety, I pulled a few things out of the fridge and came up with this delicious baby.


Spinach & Avocado Salad | a kitchen cafe




Prep: 10 minutes

Serves: 5-6 as a side, 2-3 as a main dish


8 oz tub organic spinach

1 large avocado, sliced

5-6 green onions, chopped

1 medium green pepper, diced

large handful sliced almonds

1/2 lemon, juiced

salt to taste


Wash spinach, dry excess water and put into a large bowl.

Slice avocado, chop green onions, dice green pepper and add to spinach, along with almonds.

Squeeze lemon over the salad and salt. Mix together, kind of mashing the avocado as you do because that mostly serves as the dressing, so you want it to cover the spinach.

Taste and add more salt and lemon as needed.

Adding grilled chicken is super yummy!


I do red peppers in this now and lots of almonds. SUPER YUMMY.
