Spelt Chocolate Chip Coconut Cookies

Ok obviously I’ve been using a lot of spelt lately. It’s just because I was lazy and got backed up on my recipes. So it seems like I’m obsessive right now….


I do love it, though! There has been some serious yummies coming out of my oven recently.


You need these cookies. Do it, do it, do it! Do you feel the peer pressure?? :)


  Spelt Chocolate Chip Coconut Cookies | a kitchen cafe



Prep time: 5 minutes

Bake time: 12-13 minutes


1 1/3 cup sprouted spelt flour (my go-to)

heaping 1/2 cup organic pure cane sugar

3/4 tsp baking powder

1/4 + 1/8 cup coconut oil, melted (this is my favorite brand)

1 tsp vanilla

1 organic egg

1/8 cup pure maple syrup

1/4 tsp salt

3/4 cup chocolate chips (make sure and get dairy free if you need that)

1/2 cup shredded unsweetened coconut


Preheat oven to 350.

Combine dry ingredients and then add wet ingredients. Stir until well incorporated.

Stir in shredded coconut and chocolate chips.

Put 1 1/2 tbsp-sized scoops on to a parchment or silpat-lined baking sheet.

Bake for 12-13 minutes or until bottoms are lightly browned.

They’ll still be soft when you pull them out, but will firm up while cooling on a rack. You don’t want to over bake or they’ll harden too much.
