Fried Rice

I have no problem with an elaborate, 50 step recipe. I love that. I love working really hard and spending time preparing a delicious, gourmet meal. But sometimes, I really like pulling out leftover rice and spending a few easy minutes preparing dinner. This is one of those. Super easy, fast and minimal effort. We eat this as dinner or sometimes use it as a side. It’s great for either!

 

 

Fried Rice | a kitchen cafe

 

 

Prep: 20 minutes

Cook time: 10 minutes

 

4 cups cooked rice

4 medium carrots, cut into small pieces

1/2 bag frozen peas

heaping 1/2 chopped green onions

4 eggs

3 tbsp toasted sesame oil

soy sauce, salt, pepper, garlic powder to taste

 

Cook rice.

Chop carrots and sauté in 1 tablespoon of the sesame oil on medium high for 3-4 minutes until soft.

Scramble the eggs and add, with the peas and green onions, to carrots with the remaining 2 tablespoons of sesame oil.  Add soy sauce. I do a few tablespoons, you can do more or less. Taste as you go.

Season with salt, pepper and garlic and fry for about 5 minutes and it’s ready to go.

Makes about 5 servings.

I also love pan frying some ham and throwing that in. Great as a side or main dish.
