Let’s just say this saved me today. The girls and I would have been strewn across the floor, dying of starvation when B got home this evening had I not made this. Maybe a little dramatic, but I need to go grocery shopping. So this was a, “mom what are we having for lunch??” for the third time, inspired creation. All ingredients that I almost always have in the house, it was super quick and easy. And delicious. Did I say that yet? It’d be so good with tortilla chips, as a dip. We just ate it with a spoon. Either works. :)
Prep: 5 minutes
Servings: about 2 cups
1 15 oz can black beans, drained and rinsed
1 large avocado
2 Tbsp green onions, finely chopped
2 Tbsp fresh cilantro, finely chopped
1/2 lime for the juice
1/8 tsp granulated garlic
1/4 tsp cumin
scant 1/2 tsp sea salt, or to taste
Combine all ingredients into a bowl. Mix well.
Serve with chips. Enjoy!
