Sweet potatoes are a super vegetable- my favorite kind! They’re packed with vitamins and nutrients and are so so good for you. Here’s an article that tells you all about it! Sweet potatoes are so delicious on their own, it makes them super easy to prepare in lots of different ways.

And my favorite way, oven roasted.
This is a fantastic side dish or snack. Or dinner. If I have a night to myself I seriously would make this as my dinner so I could have the whole pan to myself. Sometimes I just don’t want to share, ok?? Moms out there will know what I’m sayin’. :)
This is also the same way that I make sweet potato fries, I just prefer the small squares because they are easier to get a really good crisp on.
Prep time: 10 minutes
Cook time: 45ish minutes
Servings: 4 as a side dish
5 medium sweet potatoes
3 Tbsp olive oil
1 tsp sea salt
Preheat oven to 425.
Peel potatoes and cut into (mostly) uniform bite-sized cubes.
Put potatoes into a large bowl, drizzle with oil and sprinkle with salt. Mix well to fully coat everything.
Spread in a single layer on a large baking sheet.
Bake for 45 minutes, or until tender and crisp. The trick to getting a perfect amount of crisp is taking the pan out of the oven 2-3 times while baking and flipping/mixing the potatoes around with a metal spatula. Carefully scrape them up from the pan, flip over, rearrange in a flat layer and continue baking.
I like mine browned nicely. Take yours out where you like it!
