I’ve never liked tuna. In fact, it used to make me gag. Hated it. Thank goodness tastes change! This sandwich is SO. DELICIOUS. I made lunch for my girls and I and we threw it down in minutes. 10 minutes later, I had the girls in bed and the rest of the salad was calling to me from the fridge. “Oh! I need to take a picture! I’ll just make it and style the photo, then save it for later.” NOT. Such a good excuse to make another one, get my pictures, and have lunch #2. So, so yummy and fresh.



Tuna Salad & Avocado Sandwich | a kitchen cafe




Prep time: 5-10 minutes

Serves: 3-4 on a sandwich


1 can of wild tuna

1/2 large organic cucumber, diced

3 green onions, chopped

1-2 tbsp organic or homemade mayo

1 avocado, sliced

thick slices of organic cheese (I used cheddar because that’s what I had. SO many cheeses would go great)

sea salt and pepper to taste

sprouted bread, sliced and toasted


Toast bread.

Mix tuna, cucumber, green onions and 1 tbsp of mayo in a bowl. Add more mayo if needed. I don’t like a lot. Season with salt and pepper to taste.

Assemble sandwich.

Spread avocado on toast. Top with cheese and then tuna salad.
