Can you believe that I only tried brussel sprouts for the first time a couple months ago? I LOVE them now and we have them quite often. After making this delicious baby, I decided to add cousous for a more filling variation. And if you thought sliced brussel sprouts with caramelized onions was delicious on its own, you definitely need to try this. It pairs super well with couscous, my favorite grain. We’ve eaten it my entire life and it has always been my favorite! I love this new take on it and it is delicious served warm or cold.

Serves: 4-6 as a side, 2-4 as a main dish
2 cups uncooked couscous
1 1/2 oil or butter
1/2 tsp salt
for brussel sprouts-
10-15 medium brussel sprouts
salt, pepper and granulated garlic
To prepare couscous, you need 1 1/4 cup water to every 1 cup of couscous. So for this recipe, you’ll use 2 1/2 cups water. In a medium saucepan, combine water, oil and salt. Bring to a boil. Stir in couscous, cover and remove from heat. Let sit for 5 minutes with the lid on, remove and then fluff with a fork.
Combine brussel sprouts and couscous in a bowl and serve.
