Gluten Free Coconut Oat Waffles

Yes, these are as amazing as they sound. B surprised me with these for my birthday and they have become our go-to weekend breakfast since then! They are SO yummy and sometimes we make them into pancakes with the same batter. They’re fantastically healthy, too, which you know is my favorite! Try them this weekend!

 

 

Coconut Oat Waffles

 

Prep: 5 minutes

Cook time: approx. 15 minutes

 

1 1/2 cups oat flour (if you don’t have this, fear not. just throw some oats into your food processor and run until you have flour. voila!)

1 tbsp aluminum free baking powder

pinch salt

2 organic eggs

1 cup milk (almond or coconut)

2 tablespoons local raw honey

2 tablespoons organic coconut oil (this is my favorite brand)

1/2 cup shredded, unsweetened coconut

 

Mix together all ingredients.

Cook in your waffle maker. Top with fresh strawberries and pure maple syrup.
