My big cast iron skillet is my favorite. Cooking with it makes even the simplest things delicious. I love to saute veggies in it for a quick side, like I did with these green beans. A big drizzle of olive oil, a generous sprinkle of salt and pepper and you have a super yummy, super healthy side in about 10 minutes. We do it with all kinds of veggies, too, not just green beans. Carrots, broccoli, brussel sprouts… There are tons of options.
Prep time: 5 minutes
Cook time: 10 minutes
Fresh green beans (as much will fit in your pan without overcrowding)
2 tablespoons of olive oil (this is my favorite brand. SO DELICIOUS.)
salt and pepper to taste
Heat skillet over medium high heat.
Wash beans and break off ends. Pat off excess water.
Add beans to the pan and then drizzle with olive oil. Stir well to distribute the oil and give your beans a good coating. If it seems dry, add more oil.
Season with salt and pepper and cook, stirring often, until beans are tender and slightly charred.
Taste, adjust seasonings if needed, and serve warm.
