We love oatmeal in our house, but variation from the norm is good. Having it baked this way is totally different. And totally yummy. I drizzle it with maple syrup. Daughter likes it in warm milk with honey. Husband likes it in cold milk, sprinkled with brown sugar.
Really. Don’t think about the mushy, bland stuff you associate with oatmeal. This will become your new favorite breakfast.
3 cups rolled oats (can be GF if you use GF oats)
2 eggs (beaten)
1/4 cup oil (I use coconut oil and this is my favorite brand)
1 cup milk (I use coconut milk)
1/4 cup honey or maple syrup
1/2 cup applesauce
1/4 cup ground flax seed
2 1/2 tsp cinnamon
1 tsp baking powder
1 tsp vanilla extract
1/2 cup shredded unsweetened coconut
Preheat oven to 350.
Mix together syrup, oil and eggs. You want melted oil, here. I melt it in a pan, mix the eggs and honey first, then add in the warm oil. If you add melted oil into the cold eggs it’ll firm back up. So I make sure and mix in the room temp honey, which already brings up the temp of the eggs a bit, and then add the warm oil.
Add the rest of the ingredients and mix well.
Bake for 25 minutes in a greased glass 9 x 12 dish.
Serve warm and top with real maple syrup (not the fake junk), honey, fruit, yogurt or milk.
